Firstly - to get the narrow depth pf field (Sharp front klart and blurred backgrouynd) I shot using a wide aperture - in this case F/5.6
To get the selective colouring effect there are several ways - but all involve the same principle. Creating a black and white copy of the photograph and overlaying it on top of the colour version - then cutting through the black and white layer to reveal the colour underneath just where you want it.
