Obviously, but, in Spain, in the small villages and towns, they don't pay. Everything goes on t'slate. They pay when they can.
In bars, nobody pays until they leave. If you leave without paying, they collar you when next in!

Its like that in Canada too, the first time i went over there we was in a bar, Me and my son had a couple of beers and then i went to the bar to pay, The bar maid told me the price and i paid in cash, then went to the door as i got to the door she shouted, all the bar could hear as she screamed
"DON'T FORGET TO TIP NEXT TIME BUDDY",

When I was in Yankland, if we were sat at the bar, we were given without asking for it a 'Tab' which yoo paid at the end of your visit, and as we found out if yoo moved from the bar to sit away from the bar, which we did when it got busy, and we were getting smothered with folk trying to get served, if it had been now we would have been dead from the Covid

But I did say to the bar lady that we were moving, and she totted up the bill, and we duly paid and for the rest of the night we just paid for the drinks as we bought them, and I found the whole thing to be 'strange' and a pain in the arse

The problem is, you can be drinking until the early hours and until you've forgot how many you've had. Then, the bill is whatever they want it to be!
Worst is, two of you go in a bar at, say, 9pm. Then two others come in, sit with you, get a drink (or two). Then another mon comes in, sits with us, has three, then goes. Etc.. End of night, you get to pay for the lot!
Next night, you see the others. And they've also paid for the lot!!

Can't complain though, as it's all so cheap!

If they paid a decent wage then bar staff would not need to rely on tips
